Early last week, I felt like pancakes, crazy. I’ve tried this recipe out before but it never turned out good. Bummer.
Until I decided to blend the mixture instead of just using a whisk to mix it up.
And it turned out like MAGIC. The secret is in the blend. I blended it up for a minute and as nervous as I was to cook it, it turned out perfect.
And you know what happens next! Massive photo-shoot of these babies. Haha yeah, laugh at me. It’s not funny.
For someone who rarely cooks aesthetically pleasing food, this is amazing.
If you’re feeling pancakes and you don’t really want to have them instant Betty Crocker or hard to make with like a million ingredients one, then try this out. It literally only takes two ingredients, 15 minutes or less and no refined sugar loaded products. :)
‘Only Two Ingredients’ Healthy Pancakes
|Prep time||5 minutes|
|Cook time||10 minutes|
|Total time||15 minutes|
- 1 Large Banana
- 2 Large Whole eggs
|Add peeled banana and eggs into a blender.|
|Blend on high for at least one minute.|
|Heat a skillet on medium-high and spray with coconut oil spray.|
|Pour mixture on hot skillet, not too big and not too small.|
|Once bubbles start to form, flip it gently and cook for a further 30-60 seconds.|
|Serve with fresh berries, maple syrup or honey.|
